Champagne Billecart-Salmon was founded in 1818 by Nicolas-François Billecart and Elisabeth Salmon in Mareuil-sur-Aÿ, near Epernay. Still family-run, it is currently led by seventh-generation Mathieu Roland-Billecart. In 2016, after 30 years, Chef de Cave François Domi retired, passing the role to Florent Nys, who joined the company in 2005. The vineyards are managed by Denis Blée, with key members of the family, including François, Antoine, and Jean Roland-Billecart, on the tasting committee. By 2020, production expanded to include 100 hectares of owned vineyards and 200 hectares of managed vineyards from 40 crus. The house became certified High Environmental Value in 2017 and is now herbicide-free, with 10 hectares in organic conversion.
This champagne made from Grand Cru Chardonnay grapes in Côte des Blancs. It features a pale gold hue, persistent bubbles, and aromas of candied mandarin, pear, and chalky notes. The palate is creamy with flavors of citron zest, almond biscuit, and white pepper, finishing with citrus and vanilla hints. Aged on lees for 115 months with a low dosage (3.9 g/L), it’s praised for elegance and minerality
